the halfway update from my finance internship! I feel like the lack of sleep hit me on Thursday a bit, but by Friday I was living my best life, skipping around the park and soaking up the sunshine β˜€οΈ

πŸ‘©πŸ»β€πŸ³ratatoille/ halloumi bake recipe:
2 peppers deseeded and cut into 2cm chunks
1 aubergine cut into 2cm chunks
1 onion cut into small wedges
3tbsp olive oil
2 garlic cloves peeled and crushed
handful basil leaves, with a few left to serve
400g can chopped tomatoes
400g can chickpeas
225g block of halloumi cheese cut into 8 slices
1. preheat oven to 220 celius/ 200 celcius fan / Gas 7
2. Place peppers, aubergine and onion in a bowl and add oil, salt and pepper – you should like how your fingers taste after mixing aka lots of seasoning. Toss everything together and bake for 25 minutes
3. Remove dish from oven and turn veg to cook for another 25 minutes
4. Remove dish and stir in garlic, tomatoes and chickpeas and cook for another 25 mins.
5. Remove dish and add in halloumi on top for final 25 minutes . drizzle with oil and basic and more seasoning – salt, pepper and mixed herbs.
6. Remove from oven and serve with fresh basil and fesh bread roll/ baguette

I also understand finance can be scary for a lot of people – sadly a lot of my female friends agreed it was something they found intimidating or confusing, but I'm so happy to help with any questions. Finance is such a male-dominated field and I would love to encourage other females to consider futures in this area or even just think more about investments in general. With the gender pay gap, women's pensions are already at a disadvantage, combined with the lack of teaching when it comes to money and savings, it's pretty horrific. This will always negatively impact the most vulnerable. I'm no expert and definitely can't give any financial advice myself, but am hoping to pick up the confidence to do more videos on this – specifically how I spend, save, and invest my earnings.
